You can start pumping birch sap from mid-March, when the first leaves bloom on the trees. In this case, it is advisable to periodically do samples, checking how actively the juice flows. To collect it, you should not choose young birches, whose sap does not have a richness and genuine taste - but an older birch with a trunk thickness of 20 centimeters or more is ideal for this purpose. Having chosen a suitable tree, you need to make a transverse cut on it 3-4 cm deep and with a slight slope.
Step 2
To the incision made, you need to tie a plastic container and make a flagellum of gauze, the tip of which will be lowered into the container - the juice will flow through it into its neck freely and quickly. After the end of pumping, the hole made in the birch should be plugged with a piece of felt so that the tree can tighten its wound. The collected birch sap must be consumed fresh, since it will not stand in the refrigerator for more than two days. If you need to keep it for a long time, it is best to give preference to freezing, but you cannot save a lot of birch sap this way.

Fresh birch sap is a tonic and tonic drink, with the help of which you can overcome constant drowsiness, lethargy and fatigue, as well as increase immunity and improve metabolism.
