For red sauce, flour is pre-fried in a dry hot skillet according to the same principle. The advantage of red sauce is that the preparation for it - fried flour - can be prepared for future use and stored in a tight-fitting container in a dry place. So, if possible, to save time, you can do so.

Goulash and stew is also seasoned with toasted flour. In this case, the flour is fried like a white sauce - in a hot pan, and then added to the broth with meat. The secret to adding flour to the broth so that there are no lumps is as follows. You need to pour some broth into a glass and stir the flour directly in this glass to dissolve the resulting lumps. And then add a homogeneous mass to the goulash with meat. This will give the gravy a soft and smooth consistency.
