Step 1

Prepare the fish carcass for frying. If the fish is frozen, defrost it first. Then wash, gut and scrape off the scales. It is very convenient to cut fish with a knife with a long and thin blade. Cut off the inedible parts - head, tail and fins. Make a long cut along the back along the ridge and separate the meat from the bones. You should be left with two halves without a ridge, but with skin. If you want, you can take it off too.

Rinse the resulting fish fillet again, cut into portions and pat dry on a paper towel. Then season with salt and pepper. You can use ready-made fish seasoning. Leave the fillet to lie down for about 15 minutes - the fish will marinate and will not fall apart when frying. If you are cooking sea fish, add a little lemon juice, it will fight off the unpleasant smell.

Prepare onions and carrots - wash and peel. Cut the onion into thin half rings, and grate the carrots on a coarse grater.

Prepare a skillet in which you will fry the fillets. Make sure it is completely dry, otherwise the oil will splash. Put it on medium heat and add some vegetable oil.

When the oil has warmed up, gently place the pieces of fish in the skillet. Reduce heat slightly if necessary.

While the fish is fried on one side, in the other frying pan, save the onions and carrots in a little vegetable oil.

Step 7

After 7 minutes from the start of frying the fish, gently turn all the pieces over and put the sautéed vegetables on top. Cover and reduce heat to low.

Step 8

After 10 minutes, the fried fish with onions and carrots will be ready. Decorate the finished dish with fresh herbs, and serve boiled potatoes for a side dish.
