It is necessary

    • pork on the bone - 4 portions;
    • onions - 2 pcs.;
    • juice of 0.5 lemon;
    • allspice peas;
    • olive or vegetable oil for the marinade - 1-2 tbsp. l.;
    • salt;
    • ground pepper;
    • frying oil;
    • greens.

Instructions

Step 1

Pork should be cut into portions, washed and moisture removed using a paper towel.

Step 2

It happens that a very thick layer of bacon appears on the pork loin. It must be cut off, leaving a finger-thick layer (one cm) on the meat.

The fat must be pierced with a knife without damaging the meat.

Step 4

Beat off some pieces of meat, after wrapping them with cling film. After that, the meat needs to be salted and grated with pork spices, or just ground black pepper.

Step 5

The onions must be peeled and, periodically dipping a knife into cold water (this will save you from tears while slicing the onions), cut into rings. Allspice must be crushed in a mortar.

Put the meat in a deep bowl, add onions, allspice to the meat and pour it all over with lemon juice and olive oil (olive oil can be replaced with refined sunflower oil).

Close the dish with the meat with a lid and shake well so that all the ingredients are mixed together.

Remove the meat to marinate in a cold place for a couple of hours, although it is better if you have overnight to marinate the meat.

When the meat is well marinated, it is necessary to remove it from the dishes, remove the onion.

Heat vegetable oil in a frying pan or fry pieces of lard trimmed earlier from the loin. Then fry the pork in hot fat until golden brown on one side and on the other.

If the meat is not cooked through during frying, you can fix this by covering the pan with a lid and reducing the heat underneath. It's even better if you place the meat in a preheated oven for ten minutes. The pork will become juicier and more tender than the stew under the lid.

Before serving, put the cooked pork on the bone on a plate, sprinkle it with finely chopped herbs, garnish with parsley or coriander leaves.
