Candied fruits have been known since ancient times and have always enjoyed particular popularity in the East. Merchants brought them to Russia and Europe, and for a long time candied fruits were considered an exotic delicacy. You can buy a variety of candied fruits in the store, but if you cook them yourself, you can rid yourself of all kinds of harmful dyes and preservatives and surprise your guests with a real sweet delicacy. The easiest way to make candied peel is orange peel.
It is necessary
-
- 300 g prepared orange peels; - 700 g of granulated sugar;
- 250 ml of water.
Instructions
Step 1
Choose a few large oranges for candied fruit. It is advisable if they have a thick skin. Peel them and cut the peel into strips no more than 1 cm wide. If the width is wider, the peel will absorb the sugar syrup unevenly.
Step 2
Soak the resulting pieces of peel in clean water for three days. Change the water twice a day. This is done to remove the bitterness inherent in orange peel.
Step 3
After 3 days, place the peel in a colander and let the remaining water drain for 1 to 2 hours. Make a syrup from sugar and water. Pour the boiling syrup over the peel and let stand until the syrup cools completely. Then put the bowl with orange peel in syrup over low heat, bring to a boil and let it brew again for 10-12 hours. Repeat this procedure at least three times.
Step 4
Throw the finished orange peel into a sieve or colander and drain the excess syrup. Dry the peel. This can be done with the oven at the lowest temperature. Alternatively, simply place the rind pieces on a tray or cutting board and dry indoors. The first method will shorten the cooking time for candied fruits. If you dry the second method, then it will take more time, but the candied fruits will dry evenly. Sprinkle the dried candied fruits with icing sugar and place in a plastic container or glass jar for storage.
