Take a saucepan and pour a large amount of water into it (this is necessary in order to remove all the bitterness from the peel), add salt there, preferably coarse. Place citrus strips in a saucepan. Boil them for 5 minutes, then drain them in a colander and rinse quickly with cold water.

Repeat this process 3 more times, but without using salt. That is, it turns out 4 times - 1 time with salt and then 3 times without adding it. If you are cooking from grapefruit or lemon, you will need 5 procedures - 1 time with salt and 4 without salt. Do not forget to change the water every time After that, leave the strips in a colander to drain excess water from them.

Now you can start preparing the syrup. The proportion should be as follows: 1 glass of water and 1 glass of sugar for strips of 4-5 large oranges. You can also add cinnamon to the syrup to taste. When it boils, dip the citrus strips into it and simmer for 5 minutes. Then remove the syrup from heat and leave to cool for about twenty minutes.

Step 6

If the procedure with boiling and cooling is carried out exactly according to the rules, then it should be repeated 2 more times, then cover the pan and leave overnight. In the morning you need to get it out, put it on the fire and boil the syrup for 5 minutes. After that, leave the pan over low heat until the citrus peels are almost transparent and there is very little syrup left at the very bottom of the pan. Then you can lay the strips individually on the wire rack (so that they do not touch each other) and leave to dry.

Step 7

However, if everything is done strictly according to the rules, it takes a long time. Therefore, you can limit yourself to just one dipping citrus peels in syrup and then drying them. This will be enough.

Step 8

After placing the strips on the wire rack, roll them in sugar or dark dark chocolate melted in a water bath. Leave the resulting orangeies to dry on parchment paper or foil.
