In order to preserve garlic throughout the winter, first of all, it must be collected in a timely manner and correctly. Harvest winter garlic (planted in autumn) in late July - early August. A sign of ripening of this type of garlic is the cracking of the inflorescence shell. Spring garlic (planted in spring) is harvested in late August - early September. Ripe is the garlic in which the lower parts of the leaves have dried out, and the upper ones have turned yellow and died. The heads should be firm, the teeth should be easily separated from each other, the film should be easily removed.
Step 2
Dry the garlic. This can be done outdoors if the weather is dry and sunny, or in an oven at about 45 degrees. Well-dried heads rustle with husks.
Step 3
Store garlic in one of the following ways: warm - at a room temperature of 16-18 degrees, or cold - at a temperature of 1-3 degrees. To store this vegetable, it is best to use cardboard boxes or boxes, you can also store it in old nylon tights in a suspended state.
Step 4
Try another way of storing garlic - take a large glass jar, pour salt on the bottom, then lay out the unpeeled heads so that they do not touch each other. After that, add a layer of salt again so that the heads are immersed in the salt. When the jar is full, close it with a plastic lid and place it in a cool, dark place.
