Step 1
First recipe
Remove the top green leaves from the heads of cabbage and cut each into 6-8 pieces. Cut the peeled beets into cubes. Grate the roots of parsley and horseradish on a coarse grater. Disassemble the garlic into cloves. Place the cabbage chunks in a bucket, sprinkling with the rest of the vegetables. Spread the hot pepper pods evenly in the vegetables.
Step 2
Prepare the brine - boil water with sugar and salt. Fill the cabbage with the still warm brine and place the weight on top. For this, a granite cobblestone that is cleanly washed and scalded with boiling water is suitable. Cover the cabbage with a white cotton napkin, on which place a wooden circle or earthenware plate with a load on top of it. Leave it in the room for two days. Periodically pierce the cabbage to the bottom with a wooden stick to release the gases. Then place in a cold place for 5 days. After that, the cabbage with beets is ready to eat.
Step 3
Second recipe
Coarsely cut the cabbage into squares, cut the beets into slices, cut the garlic cloves into pieces too. In a three-liter jar, stuff the cabbage and beets tightly in layers, shifting with garlic.

Prepare the brine - boil 1.5 liters of water with salt and sugar. At the end, add a bay leaf and vinegar. Pour the cabbage with boiling brine and keep it at room temperature for a day. Then put it in the refrigerator. Such cabbage is a great snack; it can be stored in the refrigerator for a long time.
