Step 1
Use white wine vinegar as a salad dressing, sauces and marinades for fish and vegetable dishes. Use red wine vinegar for game, lamb, beef and spicy vinegar base.

Prepare a spicy vinegar: take red wine vinegar, put herbs (dill, garlic, parsley, celery, basil, or a spice mixture) in it, let it brew for one to two weeks at room temperature.

Give the vinegar the sweet or tangy taste you want by adding a little cinnamon or red pepper. Lemon zest, ginger give a pleasant taste (all herbs and spices should be completely covered with vinegar). Use to enhance the taste of salad, vinaigrette, sauce, marinade.
