Pumpkin contains beta-carotene, as well as vitamins C, E, B1, B2, R. It is relatively high in potassium, calcium and iron. Eating pumpkin pulp reduces the risk of atherosclerosis, as well as normalizes the body's water-salt balance and has a positive effect on the circulatory system. Pumpkin juice and seeds are also very useful. The latter are sources of polyunsaturated fatty acids and vegetable protein, rich in vitamin E.
Pumpkin and weight loss
Pumpkin is well absorbed by the human body. It removes excess water without negatively affecting the kidneys. In addition, pumpkin is low in calories, 100 grams contains only 22 kilocalories - this is a real dietary product. Pumpkin juice is an excellent natural antioxidant; you can even make a fat-burning cocktail from it. To do this, mix 2 parts of pumpkin juice, 2 parts of tomato and 1 part of lemon. It is believed that this recipe was invented by Italian nutritionists.

Pumpkin contains almost as much carotene as carrots, so regular consumption can lead to such a phenomenon as "carotene jaundice". It occurs when there is an excess of carotene in the body and manifests itself in the form of yellowing of the skin. To prevent this from happening, include pumpkin in your diet no more than 2-3 times a week. In order to improve the health of the body, this amount will be quite enough.

Pumpkin is a versatile product; it is good both boiled and baked. It goes well with meat, cheese, cereals, eggs and even pasta. Below are a couple of simple pumpkin diet recipes.
Pumpkin soup with ginger
- 500 g pumpkin pulp
- 2 carrots
- 1 onion
- 200 ml milk
- 20 g butter
- 1 tbsp. spoonful of freshly grated ginger
- pumpkin seeds for decoration, salt
Peel the pumpkin and vegetables, cut, add water, add 1 teaspoon of salt and cook until soft. Add milk and butter and puree with a blender. Add grated ginger, garnish with seeds before serving.
Grilled pumpkin slices
- 500 g pumpkin
- 2 tbsp. tablespoons of orange juice
- 2 tbsp. tablespoons of olive oil
- 2 tbsp. tablespoons of a mixture of dried spices
- salt
Wash the pumpkin, remove the seeds, cut the pulp into slices. Mix juice, oil and a little salt. Grease the slices with marinade and grill for 10 minutes. Then sprinkle with spices. Serve with any sauce.
