Soups are essential for proper digestion. Diet vegetable puree soups are especially useful. These soups can be very tasty, the main thing is to cook them correctly.

Step 1
The simplest puree soup can be made with a minimal set of vegetables. Wash and peel potatoes, carrots and onions. Cut the potatoes into 0.3-0.4 cm slices, carrots - 0.2-0.3 cm slices, onions - into thick half rings. Place the chopped vegetables in a saucepan and cover with water. There should not be too much water, otherwise the soup will turn out to be too thin. It is optimal when vegetables take up 2/3 of the water volume.
Step 2
Place the pot of vegetables on high heat, wait for the water to boil, and reduce the heat. The saucepan should sit over low heat until the vegetables begin to boil. This usually takes 30-40 minutes. Soup puree will be tastier if, 20 minutes before cooking, you put bay leaf in boiling water.
Step 3
When the vegetables are tender, remove the pot from the stove and grind the contents of the pot with a hand blender. If you will grind vegetables in a stationary blender (glass blender), wait until the contents of the pan have cooled to room temperature. As hot mashed soups in a blender can ruin it.
Step 4
Place a pot of chopped vegetables on the stove and wait for the vegetable puree to boil. Season the soup to taste, add black pepper and olive oil. Mix everything thoroughly and leave the puree soup to simmer for 3-5 minutes. Sprinkle chopped herbs over the puree before serving.
Step 5
This vegetable puree soup is a stand-alone dish, but it tastes much better when you add additional ingredients to it. For example, in addition to potatoes, onions, and carrots, you can add red bell pepper slices to the pot. Thus, you get a fragrant paprika puree soup. And if you add slices of white radish to the set of vegetables, the finished dish will acquire a piquant spiciness.
Step 6
Vegetable puree soups with various dressings are especially good. As such dressings, you can use, for example, green beans. Beans are added after the vegetables are chopped with a blender and boiled until tender right in the soup. Making the green bean puree soup won't take long with frozen beans. It is better to pre-boil fresh green beans until half cooked and only then add mashed potatoes to the soup.
Step 7
You can use fresh or frozen spinach instead of green beans. Spinach puree soup is cooked in the same way as green bean puree soup.
