So how to cook herring in wine sauce?

Standard recipe

To prepare this dish, you will need a whole uncut herring, from which you need to remove the skin, remove all the insides, leaving milk or caviar, if any. The tail, fins and head are also removed. To easily remove all the bones, the carcass must be cut in half along the ridge. If the meat is very salty, then it can be pre-soaked in water or milk, or at least just rinsed with running water. Further, it is recommended to roll the prepared fillet into rolls, fasten it with skewers and put it in a special dish.

To prepare wine sauce, 2 cups of dry white wine must be poured into a saucepan, put on fire and evaporated for 3-5 minutes. After that, 25 grams of sugar, 3 tablespoons of wine vinegar (you can take any), 2-3 bay leaves, a little clove and 0.5 tablespoon of mustard seeds are added to the container. Stir the contents of the saucepan constantly until all the sugar is dissolved. After that, 2 onions cut into rings are placed in it and the whole sauce is simmering on the stove for another 5 minutes. After cooking, the marinade sauce should be allowed to cool, and then pour the herring over it and put it in the refrigerator for about a day.

To prepare herring in wine sauce according to this recipe, you will need water. Having poured 300 ml of water into a saucepan, you need to put it on the stove and add 1 tablespoon of salt, 4 tablespoons of sugar, 1 tablespoon of grated ginger root, a couple of sticks of cinnamon and cloves, 0.5 teaspoon of white peppercorns and bay sheet. Protomit the sauce on the stove for a quarter of an hour, chill it and add one tablespoon of vinegar and one tablespoon of wine vinegar. Pour marinade over herring mixed with vegetable oil and refrigerate overnight. In the morning you can already enjoy a ready-made snack.
