This is a recipe for a delicate and juicy cake with vanilla and prune aroma and a mild curd flavor. The traditional muffin pan is a circle with a hole in the middle, but you can cook rectangular muffins. When preparing the cake dough, keep in mind that all ingredients must be the same temperature.
It is necessary
- - 4 eggs;
- - 400 g flour;
- - 300 g of yogurt;
- - 250 g of cottage cheese;
- - 200 g of sugar;
- - a glass of prunes;
- - 4 tbsp. tablespoons of vegetable oil;
- - 2 tbsp. spoons of brandy;
- - 0.75 tsp baking powder;
- - vanillin.
Instructions
Step 1
Rinse the prunes, fill with cognac. Let it soak for 30 minutes. If during this time the cognac has not been absorbed, heat the prunes for 1 minute in the microwave, then cool.
Step 2
Beat eggs with sugar into a fluffy foam, pour in butter, whisking. Add cottage cheese to the cream, mix at low speed of the mixer.

Stir in flour and baking powder, add vanilla. Mix the dough with a spatula. Add prunes, knead again, pour into mold.
Step 4
Bake for 15 minutes at 200 degrees, the dough should crack. Then reduce the heat to 160 degrees, bake the cake until golden brown. Leave it to cool in the oven.

Remove the cupcake, place on the wire rack, and let cool completely. After that, sprinkle with icing sugar, cut into portions, serve with tea.
