At home, you can make a very tasty and healthy berry marshmallow. It is best to use fresh berries for it, but frozen ones are also suitable. In this case, before cooking, they will need to be thawed at room temperature so that there is no excess liquid and a watery taste in the pastille.

To prepare currant marshmallow, the berries must be carefully sorted out, twigs, small debris must be removed, then rinsed under running water. You will need to take 1 kg of berries. Place them in an enamel pot.

Add 150 ml of water to the prepared berries. Turn on the heat under the saucepan and bring the mixture to a boil. Boil for fifteen minutes, until the juice comes out and the berries are completely softened. The mass must be cooled, then rub well through a sieve to remove the peels and seeds.

Add 300 grams of sugar to the currant puree. Beat the mixture until it reaches the consistency of an airy mousse. Boil the resulting mixture and cook for 20 minutes with constant stirring. The mixture should thicken to the consistency of sour cream. Chill it, then line a baking sheet with parchment paper, brush it with vegetable oil and put the currant puree on it.

Place the mashed potatoes on a baking sheet in a layer no more than three centimeters. Keep it in the oven on low heat, about 20 minutes, and be sure to monitor its condition. When the candy is ready, refrigerate and cut into small pieces. Sprinkle them with icing sugar. It is better to store it in glass containers. The marshmallow can be stored in the refrigerator for several months, while its beneficial properties will not be lost.
