How to cook sushi rice?
For making sushi, it is best to take Japanese rice, as it differs from other varieties in better stickiness. Wash 200g of rice in cold water, changing it periodically, until the water turns clear. Strain it through a sieve and set aside for an hour. Then transfer the rice to a deep saucepan and pour in 250 ml of water. There should be one-third more water in the pan than the rice. Cover the pot with a lid, put it on fire and let the water boil. Cook the rice over low heat for 13 minutes until the water is absorbed. Then, remove the pan and let the cooked rice stand for 15 minutes, but do not open the lid.
