Today, many people want to learn how to cook rolls and sushi at home, but since the nature of the preparation of Asian dishes is very specific, almost every beginner at the initial stage encounters certain difficulties. How to properly cook rice for sushi is one of the most common and important questions asked by all novice Japanese cooks.

- - water (3 glasses and 150 ml);
- - rice vinegar (1/3 cup);
- - sugar (3 tablespoons);
- - salt (1 tsp).
Instructions
Step 1
Place the required portion of Japanese rice in a deep bowl. We wash the rice in cold water for 5-10 minutes, while carefully rubbing it with our hands.
Step 2
Quickly drain the water, holding the rice with your hand, and repeat the steps described in step 1 again until the cloudy water becomes clear.
Step 3
We put the washed rice in a colander and leave it there for 20-30 minutes to allow excess water to drain.
Step 4
We put the rice in a saucepan and add water to it (there should be a little more water than rice). Then leave the rice to soak for 30 minutes.
Step 5
Cover the rice with a lid and cook it over high heat until the water boils. Then make the heat low and cook the rice for another 15 minutes. When cooking Japanese rice, try to open the lid as little as possible.
Step 6
Remove the saucepan with rice from the stove, but don't open the lid yet (wait another 10-15 minutes) to let the cooked rice steam.
Step 7
While the rice is cooking, prepare the sushi sauce. To do this, mix rice vinegar, salt and sugar in a separate saucepan. Then put the saucepan with the prepared mixture on low heat and heat until the sugar dissolves. The prepared vinegar should be cooled.
Step 8
Transfer the cooked hot rice to a deep bowl. Use non-metallic cookware as vinegar can oxidize with metal. A wooden tub (hangiri) is best suited for these purposes, since the tree absorbs excess moisture and allows the rice to cool faster.
Step 9
Pour the sushi sauce into a bowl of rice and stir it quickly, preferably using a special rice paddle (shamoji). To prevent the rice from sticking to the paddle, it should be pre-moistened with water. We stir the rice carefully, otherwise it may turn into porridge. To cool the rice and remove excess moisture from it while stirring, fan it.
Step 10
It is recommended to use ready-made sushi rice immediately after cooking.
