Fried cod is a delicious and mouth-watering dish for any lunch or dinner. The fish itself is not very fatty, but satisfying, rich in vitamins, phosphorus and iodine, therefore it is perfect for medical and dietary nutrition. To keep the fried cod from getting dry and tough, it can be marinated or cooked in various sauces.
Cod is considered a delicious and inexpensive saltwater fish that can be cooked in a regular pan with a minimum of ingredients. As a result, you will get tender and aromatic fried fish. First you need to properly disassemble the cod.
Butchering cod
Rinse the cod in cool water, use a knife to scrape off the fish scales, periodically rinsing under running water. Cut off the head, fins and tail of the fish. Then, from the side of the head, make a small incision along the belly of the fish. Take out the inside of the fish and peel off the black film, rinse again. Cut the cod into portions approximately 2 cm thick. If your fish is small, it will be sufficient to cut it in half. Next, use the following recipes for frying cod.
Fried cod in batter
To prepare this dish, you will need the following ingredients (for 2-3 servings):
- 500 g of cod;
- 1 tbsp. flour;
- egg - 2 pcs.;
- 100 ml of vegetable oil;
- lemon - 1 pc.;
- salt (to taste);
- fresh herbs (dill, parsley, onion, etc.);
- mixer (blender).
Salt the cod pieces cut in advance, outside and inside, and leave for 10 minutes so that the fish is slightly salted. Pour the flour into a small bowl and then dump the cod pieces in it.
Beat the eggs and salt a little, then beat with a mixer or blender. Heat vegetable oil in a skillet. Dip the fish pieces into the egg mixture and place in the hot skillet. Fry for about 5-7 minutes until the fish is golden brown and crusty. Then turn over to the other side and continue to fry.
Put the fried cod on a plate, pour over with lemon juice and garnish with fresh herbs (parsley, dill, etc.). Fried cod in batter is completely ready and can be served. Rice, vegetables, lettuce, etc. are suitable as a side dish.
Fried cod with vegetables and herbs
It takes more effort and time to cook fried cod with vegetables and herbs, since the frying process is accompanied by stewing. You will need the following ingredients:
- 500 g of cod;
- 100 ml of vegetable oil;
- 150 g sour cream or cream;
- onions - 3 pcs.;
- tomatoes - 2 pcs.;
- pepper - 2 pcs.;
- salt (to taste);
- greens (parsley, dill, etc.).
Peel and cut the onions into half rings. Then heat the vegetable oil in a pan and fry the onion until golden brown for 2-3 minutes.
Wash the tomatoes and cut into slices, put in the pan directly on the onion, salt and fry for about 5 minutes.
Put the prepared portions of cod on the fried vegetables, cover the pan with a lid and simmer for a few minutes, then turn the fish over and continue.
Wash the pepper, remove the seeds and core, cut into small strips. Chop the herbs finely to taste (parsley, dill, onion, etc.), mix with pepper and cream (sour cream), then salt.
Pour the cream and vegetables over the stewed cod. Cover again and simmer over low heat for 10-15 minutes. Fried cod with vegetables and herbs is completely ready and can be served with rice or potatoes.
In the event that during the frying process the fish turned out to be a little dry, then serve it along with a creamy sauce, which can be prepared as follows: chop the garlic and any herbs, and then stew in sour cream or cream. Bon Appetit!
