Step 1

We dry the crackers.

To do this, we take bread (here you can also use fresh; the variety is not important). Turn on the oven 180 degrees. We cut our bread into small cubes. Place on a baking sheet. We put the baking sheet in the oven. We keep the crackers in a closed oven for about 10 minutes, waiting for them to brown. Then turn off the oven and leave it to cool without removing the biscuits from it. The main thing is to keep the golden mean: not to let the breadcrumbs burn out and not dry enough. Burnt rusks are inedible, and underdried rusks spoil rather quickly.

Step 2

Fry croutons.

Cut the bread into medium-sized pieces. Croutons are different: with an egg, garlic, with cheese, sweet.

For making toast with egg, ingredients: 3 eggs, 1 glass of milk. Mix milk and eggs, whisking in a homogeneous mass all the time in one direction (so that the protein does not curl back). If we want to get croutons for tea, then add 2 tbsp. tablespoons of sugar. Dip slices of bread into the resulting mass, put in a preheated pan. And then be sure, frying from all sides, carefully making sure that they do not burn!

There are two ways to prepare garlic croutons. The first, already obtained croutons, are rubbed with salted garlic mass; second, garlic is first fried in a pan, and only then croutons are added. But keep in mind: garlic burns very quickly!

Step 3

Cooking kvass.

We need: 3 liters. water, 200 g of sugar, 20 g of yeast, rye rusks crushed to a powder state.

Pour the available crackers into a capacious saucepan, pour three liters of boiling water. We are waiting for the resulting mass to cool down. After that, filter, add sugar and yeast, mix. We leave alone for 10 hours. After 10 hours we pour our kvass into bottles, put in the refrigerator for 2 days. Homemade kvass tastes much better than store-bought kvass. It invigorates the spirit and improves the mood!
