Cornel is a berry with an unusual but very pleasant taste. In addition, they are rich in vitamins and amino acids, have a beneficial effect on digestion and activate metabolic processes. Unfortunately, fresh fruits ripening at the end of summer are not stored for long. But they can be used for winter preparations - for example, for making thick dark red jam.
Cornel jam: a classic recipe
Dogwood jam is usually boiled seedless. It is stored longer, besides, such a product can be used not only for tea parties and spreading on bread, but also for baking pies, muffins, and other confectionery products. In order for the berries to retain their beautiful shape, you need to mix the jam very carefully, or it is better to just shake it. The pot is boiling. This recipe can be varied by adding lemon, raspberries, apples and other ingredients. With the inclusion of new components, the amount of sugar will have to be increased.
Ingredients:
- 1 kg dogwood;
- 1, 2 kg of sugar;
- 0.5 liters of water.
Sort the dogwood, remove spoiled and damaged berries. Rinse selected raw materials in several waters, dry on a spread towel, remove seeds.
Put the sugar in a saucepan, add water, put on the stove and bring to a boil. Reduce heat and cook syrup until crystals are completely dissolved and thickened. Put the dogwood in the sugar mixture, stir, remove the pan from heat and leave for 5 hours.
Return the jam to the stove, bring to a boil and simmer for 10 minutes. You cannot stir the softened berries; to evenly soak the syrup with the syrup, shake the pan from time to time.
Pour hot jam into pre-sterilized jars, roll up the lids, turn over the containers and leave to cool. The treat is stored in a cool, dark place; you do not need to put the jars in the refrigerator.
Jam with seeds
Cornel jam can also be made with seeds. They will give the delicacy a pleasant sweet and sour taste and add subtle astringent notes. Such jam is served not only as a dessert, it will become an original addition to meat. Such dishes are often prepared in the Caucasus and Crimea.
Ingredients:
- 1 kg dogwood;
- 1, 2 kg of sugar;
- 50 ml of water.
Sort the dogwood and rinse. Pierce each berry with a toothpick for better juice extraction. Pour the dogwood into a bowl, add sugar and stir by hand. Leave for 3 hours, pour in water and move the container to the stove. Bring the mixture to a boil and cook for 6 minutes. Remove the workpiece from the stove and cool. Repeat the procedure 2 more times. Pour hot jam into clean jars, roll up and leave to cool.
Multicooker recipe
Delicious jam can also be prepared in a multicooker - normal, or with the function of a pressure cooker. This device significantly speeds up the process, the jam is beautiful and rich in taste.
Ingredients:
- 580 g dogwood;
- 680 g sugar;
- 130 ml of water.
Go through the dogwood, remove debris and stalks. Rinse the berries in several waters and dry by sprinkling on a towel, then remove the seeds. Transfer the fruits to a saucepan or bowl, add granulated sugar and mix gently. Leave the dogwood for 10 hours to form a sufficient amount of juice.
Transfer the swollen dogwood with syrup to the multicooker bowl, add filtered or bottled water. Close the lid, turn on the "Extinguishing" mode for 1 hour. If the jam is being cooked in a pressure cooker, the valve is moved to the open position. There is no need to stir the mass during cooking.
Until the mixture reaches the desired condition, prepare the cans and lids. Fill the boiled and dried containers with hot jam and tighten the lids. Leave the workpieces to cool, and then put them in storage.
