Pour the flour into a bowl in portions, kneading and adding water and flour again. Knead the dough until smooth, cover the bowl with a napkin, wrap it with a blanket on top, leave in a warm place for three to four hours. During this time, you need to knead the dough two or three times - sit with your hands and cover again and leave to ferment. Soak sesame seeds in cottonseed oil

Put the dough on the table, divide it into pieces of two hundred to two hundred and fifty grams, roll them into balls, put the balls next to each other and cover with a napkin. Roll them into flat cakes that are half a centimeter thick in the middle and two centimeters at the edges. Make pricks in the center of the cake (either with a special tool called a chekich, or with a fork). Cover the formed cakes with a towel.

Let the cakes sit for fifteen to twenty minutes. Brush each cake with sesame seed cottonseed oil. Bring the temperature in the tandoor to 300 ° C, then slightly reduce the heat, put a cotton glove on your hand, put the flat cake on the glove with the back side up, spray it with salt water, stick to the hot wall and, after sticking a few pieces, increase the heat and sprinkle them with water, bake three - four minutes.

Step 5

Separate the cakes from the walls of the oven with a slotted spoon, pick up with your hand, protected by a long cotton glove.

Step 6

Bake the cakes in a gas oven: heat it to 300 ° C, grease a baking sheet with vegetable oil, put the finished cakes on it, sprinkle them with salt water, place the baking sheet on the top shelf of the oven, bake for about five minutes.
