Homemade kvass can be made from bread and rye flour. For the first version of the drink, you can use the leftover bread, adding yeast, water, sugar to them. The second recipe is a yeast-free sourdough drink.
Homemade kvass is a completely natural product prepared with love by the diligent hands of the hostess. In addition, this drink is cheaper than the store counterpart. Another indisputable argument in favor of making homemade kvass is a great way to use excess bread.
Rye Bread Drink
Ingredients:
• 400 g of rye bread;
• 100 g of sugar;
• 10 g of fresh yeast;
• 5 liters of water;
• a few raisins.
Do not throw away the leftover brown bread, it can be used to make a great drink. It is best to use Borodinsky, but other rye varieties will do as well. If it is "Borodinsky" that is used, then first you need to peel off the crust on which the coriander seeds are located.
Now the bread needs to be cut into 1 centimeter slices and dried in the oven or in a dry skillet, stirring occasionally. In the latter case, the width of the slices is small - 1.5-2 cm. The croutons should brown slightly.
Next, the prepared bread is poured with five liters of boiled water cooled to 40 °. Sugar is poured here and yeast diluted in 100 grams of water is poured in. Everything is gently mixed.
It is important not to cook kvass in an aluminum pan, only a glass or enamel pan will do. After all the necessary ingredients have been added, cover the pan and ferment in a warm place for 2 days.
After this time, the drink is filtered. They are poured into 1-2-liter bottles, put 3-6 raisins in each and put into the refrigerator. After 12 hours, kvass can be tasted.
Kvass from rye flour without yeast
Some lovers of the folk drink are frightened off by the mash smell that accompanies homemade kvass made with yeast. Therefore, you can use the old recipe for kvass made from rye flour, in which this ingredient is absent.
To make it, you must first make a sourdough. It will need the following ingredients:
• 200 g of rye flour;
• 2 tablespoons of sugar;
• 400 g of cold boiled water;
All components are mixed and the mass is placed for 2 days in a warm place for fermentation. The leaven is ready. Now you can make rye kvass from it.
After this time, the mass is stirred, add 2 more tablespoons of sugar and the same amount of rye flour. Everything is thoroughly mixed and filled with three liters of boiled water, cooled to 40 °. The solution is placed in a warm place.
After 3 days, kvass from rye flour is ready. The liquid is carefully drained from it, cooled and a refreshing drink is drunk. The density is not poured out - this will be the leaven for the next kvass. She is fed by adding again 2 tablespoons of rye flour and sugar, topped up with three liters of water.
Thanks to its sourdough, you can make a homemade drink many times, adding sugar, flour and adding 3 liters of water to it.
