Home-cooked duck is a favorite among gourmets. Duck baked in the oven is an unusually tasty, satisfying and beautiful dish that can please a family on a holiday. And the extraordinary aroma emanating from the oven will not leave indifferent even the most fastidious in food.

    • duck weighing 1.5-2 kilograms;
    • 4 medium apples (sweet and sour);
    • honey;
    • orange liqueur;
    • mustard beans;
    • half a lemon;
    • Bay leaf;
    • salt;
    • peppercorns;
    • spices to taste;
    • vinegar.

Instructions

Step 1

Take a duck and wash it thoroughly under running water. Examine the carcass for feathers and hairs, if any, pluck or scorch over a fire. Remove entrails and uncleaned residues, rinse and pat dry with paper towels.

Step 2

The next step is to prepare the marinade, thanks to which the duck will turn out delicious and tender. Take a large container so that the whole bird can fit in it and fill it with water. Salt and add vinegar, the water should taste slightly acidic. Add four bay leaves and ten to fifteen peppercorns. Cover the dish with a lid and let the duck marinate for three to four hours. To speed up the process, you can put a load on the bird.

Step 3

While the duck is marinating, prepare the filling. Take four medium apples and wash thoroughly, cut into small wedges (remove seeds). Season the apples with salt, lightly pepper and sprinkle with cinnamon. Do the same with half a lemon.

Step 4

After the duck has been marinated, remove it from the water and brush the inside with table salt. It's time to stuff the carcass: put apples and lemon inside, alternating them and laying them in layers. Take a needle with thick, long thread and sew on the weft.

Step 5

In a separate bowl, combine five tablespoons of honey, two tablespoons of orange liqueur, and a tablespoon of mustard seeds. Mix everything thoroughly and generously grease the duck with the prepared sauce, carefully place it back down in the baking sleeve, fix the holes with clips and send to a baking sheet. Punch a few holes in the foil to allow hot steam to escape.

Step 6

Preheat the oven to 200 degrees and bake the duck for one and a half to two hours. During this time, the bird will be fully cooked and acquire a golden brown crust, from which a unique aroma will emanate.

Step 7

To check if the duck is done, cut open the roasting sleeve and pierce the carcass with a knife or skewer. If the juice is light, without the presence of ichor, then the dish is ready for a meal.
