When there are only a few days left before the festive feast, there is no time to create a complex New Year's menu with a dozen dishes. Forget about preliminary preparation, many hours of standing at the stove and prepare simple recipes for the New Year.
On the eve of a big holiday, I want to treat loved ones with something memorable. However, tasty dishes are not always difficult to prepare. You should not turn the New Year's menu into a gastronomic marathon, starting to cook a week before the feast. Take note of simple New Year's recipes that will not take a lot of time and save your budget.
Hearty Confetti salad
Cut the cucumbers and sausage into strips, chop the carrots, and chop the cheese on a grater. Combine the ingredients, adding spices and mayonnaise to taste, and place in a cold place for 60 minutes.
Chicken and mushroom salad
Use chopped onions and champignon slices for frying. Cut the chicken into small pieces, add onions and mushrooms. Mash the hard-boiled eggs with a fork, chop the cucumbers, and chop the cheese on a grater. Combine all the ingredients of the salad, add spices and season with mayonnaise.

Chicken rolls with mushrooms
Rinse well and cover the chicken breast with paper towels. To twist the rolls, you need to cut the meat along the grain, not reaching the opposite edge. It looks like an open book. It is also recommended to break off the breast. Sprinkle the chicken with salt and pepper to taste and move on to the filling. Fry chopped onion with finely chopped mushrooms and add grated cheese to the fry. Gently wrap the filling in the meat by twisting the roll and securing it with a toothpick. Dip the chicken in flour, then in a lightly beaten egg. You can repeat this several times to thicken the batter. Fry the rolls on both sides, pour in the wine and simmer for another 10 minutes over low heat.
Idaho potatoes in the oven
A quick and very appetizing dish that goes well as a hot snack with strong alcohol and as a side dish for meat.
Cut the peeled potatoes into 8 wedges. Put them in a pot of water, season with salt and cook over medium heat with the lid open for 2 minutes. Throw in a colander and cool. Melt the butter, add chopped herbs and sauce to it. Place the potato wedges in a baking dish and cover with the spicy mixture. Cook the dish for half an hour, preheating the oven to 180 degrees. If serving "Idaho" as a snack, then do not forget to prepare cheese and garlic sauce.
