Step 1
For jam, it is better to use young zucchini with soft skin and soft seeds. If you are using old zucchini, then remove the skin and remove the seeds. Rinse the courgettes and cut into medium cubes. Place the zucchini cubes in the saucepan in which you will cook the jam.

Rinse oranges and lemon well (you can use a brush and a little baking soda). With a fine grater, remove the zest from the fruit and mix with the zucchini.

Use a knife to cut the white skin off the fruit. Cut the fruit pulp into small pieces, which mix with the courgettes. Remove pits from oranges and lemons, even one small pit can add bitterness to the finished jam.
Step 4
Cover the prepared ingredients for jam with sugar (cane can be used) and leave for about half an hour - an hour. During this time, juice will be released from the zucchini and fruits. Cook the jam in two steps. Prepare jars (sterilize). Put the hot jam in jars, roll up the lids, cover with a towel and leave to cool, then put it in the pantry or cellar for storage.
