Mexican cuisine has brought many spicy foods to the world. Chicken cooked in Mexican style with an abundance of hot black pepper will not be a disappointment for fans of exotic.
To prepare the dish, you will need the following ingredients: 600-700 g of chicken fillet, 2 medium onions, 2 bell peppers, 5 ripe tomatoes, 400 g of canned corn, 3-4 cloves of garlic, 300 g of hard cheese, sour cream, black pepper, salt, 1-2 tbsp. l. vegetable oil for lubricating the mold.
First of all, you need to prepare the chicken fillet. The meat is washed in running warm water and dried with paper towels. Cut the fillet into pieces of medium size. Rub each piece thoroughly with black pepper.
Instead of fillets, you can use poultry drumsticks and thighs for cooking. The main thing is to grate the meat generously with ground black pepper. You can reduce the severity of the dish by simply sprinkling pepper on the meat laid out in the mold.
The washed bell pepper is cut lengthwise and the core and seeds are removed. Then the pepper is cut into thin strips. You can use vegetables of any color. Onions are peeled and finely chopped. Peel the garlic and rub the cloves through a fine sieve. You can chop the garlic by passing it through a press.
Tomatoes are cut into thin slices. You can replace fresh tomatoes with canned ones. In this case, it is recommended to remove the skin from the fruit, as it is much tougher than fresh vegetables. Canned corn is thrown on a sieve to completely drain the liquid. The cheese is grated on a coarse grater. After processing, each ingredient is transferred to a separate clean plate.
The bottom and walls of the baking dish are greased with vegetable oil. The ingredients are laid out in layers in the form: onions, bell peppers, tomatoes. Then corn is laid out, which must be smoothed over the entire surface of the previous layer. Sprinkle a layer of corn with chopped garlic. Chicken fillet is placed on top of the garlic. It is advisable to grease the surface of the meat with a little sour cream.
Ground black pepper is an essential ingredient in Mexican-style chicken. However, you can use other favorite spices by sprinkling them on the vegetables while laying in layers.
The oven is heated to 190-200 ° C. The mold is placed on the middle level. Cooking chicken and vegetables will take 35-40 minutes. At least 2 times during this time, the mold should be removed from the oven in order to turn the pieces of meat and achieve even baking. 10 minutes before the dish is ready, the Mexican chicken is sprinkled with grated cheese and sent back to the oven. As soon as the cheese is sufficiently browned, forming a golden crust, you can remove the dish from the oven.
Mexican chicken is often not baked in the oven, but stewed in a deep frying pan under a tightly closed lid, having previously fried all the ingredients. In this case, an unusually tasty and spicy sauce is obtained. The cooked chicken with vegetables is put into a beautiful dish and served hot. An excellent addition to Mexican chicken will be a light vegetable salad or boiled potatoes.
