Pancakes with strawberry-semolina cream are a truly summer breakfast. Such delicate pancakes can also be served as a snack. Instead of strawberries, you can take any other seasonal berry.
It is necessary
- - 1, 5 glasses of wheat flour;
- - 1 glass of yogurt;
- - 200 g of strawberries;
- - 1 egg;
- - 3 tbsp. tablespoons of sugar, semolina;
- - 1 tsp baking powder;
- - salt.
Instructions
Step 1
Sort the berries of fresh strawberries, chop in a blender until smooth, then rub through a sieve to remove the seeds.
Step 2
Knead the pancake dough in a bowl: pour in the yogurt, add the egg, sugar and salt. Whisk, add baking powder. Sift flour into a bowl and knead to a homogeneous dough. The dough should be thicker than the pancake dough, but also slightly thinner than the usual pancakes.
Step 3
Fry the pancakes from the resulting amount of dough in a skillet in vegetable oil.
Step 4
Pour the strawberry puree into a saucepan, add 0.5 cups of drinking water there. Bring to a boil, if the strawberries are not very sweet, add sugar. Add the semolina to the boiling strawberry puree, stirring to avoid lumps. After boiling, cook for another 3 minutes. Whisk the mixture with an immersion blender for 3 minutes - the mixture will become more homogeneous and lighter. Grains will not be felt.
Step 5
Arrange ready-made pancakes on portioned plates, pour with strawberry-semolina cream. Garnish with whole strawberries. Serve - the pancakes are not thick and very tender. Excellent summer dessert or breakfast!
