To cook cream cheese soup from pearl barley, you will need:

- 1 cup pearl barley;

- 100 g of processed cheese;

- 2 onions;

- 4 glasses of milk;

- 1 liter of water;

- salt to taste.

Rinse and soak the pearl barley for several hours. Then boil 2 cups of water, add salt and pour the pearl barley into it. Bring to a boil, add peeled and finely chopped onion, small pieces of processed cheese and warm milk. Boil the mixture for 3 minutes until the cheese is completely melted, then remove from heat and let the soup brew for 20 minutes. When serving, you can add cream.

Barley porridge with zucchini recipe

To prepare barley according to this recipe, you need to take the following products:

- 200 g of pearl barley;

- 100 g zucchini;

- 1 carrot;

- 2 ½ cups vegetable broth or water;

- 2 tbsp. l. vegetable oil;

- young thyme;

- ground black pepper.

First of all, prepare your vegetables. Peel, wash and cut the carrots into small cubes. Then save in vegetable oil. Zucchini also, peeled from the skin, cut into small cubes.

Rinse the pearl barley thoroughly first with warm and then hot water. Then drain the water, and pour the pearl barley with cold water and set to soak for 2-3 hours. After this time, combine the prepared cereals with carrots and lightly fry. Then add the sliced zucchini, pour in the broth and cook the porridge, stirring occasionally, until thickened, without covering the dish with a lid. When the porridge thickens, remove the pan from the heat, add a pinch of young thyme and stir well. Cover the dishes with a lid and bring the pearl barley porridge until fully cooked in the oven.

When serving, place the barley on a platter and garnish with herbs.

Norwegian barley recipe

To cook Norwegian barley, you will need:

- 100 g of pearl barley;

- 1 tomato;

- 6 sprigs of mint;

- ½ head of onion;

- olive oil;

- lemon;

- ground black pepper;

- salt.

Rinse the pearl barley and soak overnight. The next day, boil 300 milliliters of water and pour the barley into it, cook until tender, then discard the cereal in a colander. Peel the onions and chop finely. Dip the tomatoes in boiling water for a couple of minutes, then remove the skin and chop finely. Wash the mint, dry and chop with a knife. Heat the olive oil in a saucepan, put the grits and onions in it and mix thoroughly.

When the barley and onions are hot, add the tomato and mint. Stir well, season with salt, pepper and drizzle with lemon juice. If desired, barley prepared according to this recipe can be served as a side dish with lamb.
