One of the basic recipes for making mustard is in water. It turns out to be quite sharp and burning. To prepare it you will need:

- dry mustard powder - 4 tablespoons;

- warm boiled water - 6 tablespoons;

- table salt - ½ tsp;

- sugar - 3 tsp;

- table vinegar - 1 tablespoon;

- vegetable oil - 1, 5 tablespoons

Boil the water in advance and let it cool, but not too much. Pour the mustard into an empty bowl and add 2 tablespoons. water. Mix everything so that you get a homogeneous mass. Then pour in the remaining water - in consistency, everything should look like a thick porridge. After 5-10 minutes, drain the water and add the spices. Mix everything well - the mass should be homogeneous, without lumps. Transfer the product to a container and let it brew for a day in a warm place.

You will need far fewer ingredients to make homemade mustard with cucumber brine. So, in the list:

- mustard powder - 3 tablespoons;

- pickle from pickled cucumbers - 1 glass;

- vegetable oil is literally a drop.

Mix dry mustard with cucumber pickle and add some vegetable oil. An important point here is that the pickle must be from pickled cucumbers, because it is in it that there is the right amount of salt, sugar and vinegar.

French mustard is made from whole grains. To prepare it you will need:

- mustard seeds - 180 g;

- wine vinegar - 250 ml;

- granulated sugar - 180 g;

- various spices to taste: cinnamon, cloves, cardamom, lemon zest, etc.

Boil the wine vinegar, lightly crush the mustard seeds in a mortar and add the vinegar to them. Send the resulting mixture to a warm place for 12 hours. After that, it remains only to add sugar and spices, mix everything well. Leave the food in a warm place for another 2 hours.

If you like sweet mustard, take:

- mustard powder - 4 tablespoons;

- granulated sugar - 1 tablespoon;

- flour or starch - 1 tablespoon;

- vegetable oil - 1 tablespoon;

- wine vinegar - 3 tablespoons;

- water - 50-60 g (alternatively, you can use lemon juice, white wine, apple cider);

- salt to taste.

Thoroughly mix mustard with flour or starch, add water (or any ingredient on the list). Leave the mixture to swell for 20 minutes. Then add sugar, wine vinegar, salt and vegetable oil and put the prepared mass in a warm place for 2 hours.
