It is necessary

    • sugar - 200 g for the base and 20 g for the cream;
    • butter 70 g;
    • nuts (walnuts, almonds, hazelnuts) - 100 g;
    • oat flakes
    • not requiring cooking - 70 g;
    • cream 33% - 4 tablespoons;
    • any fruit - 200 g;
    • yolk of 1 egg;
    • milk 90 ml.;
    • flour - 2 tsp;
    • cake jelly - 2 tsp;
    • juice - 130 ml.

Step 1

Take a rectangular or square shape with low sides, it will look better in it and it will be easier to pry off the cut piece with a spatula. Lubricate it with butter. Dry the walnuts in the oven or in a skillet. You can use cashews, almonds, or hazelnuts, or a combination of these, instead.

Step 2

Make cake caramel. The process requires special attention, since the caramel can burn or harden before the prescribed time. Place the sugar in a heavy-bottomed skillet or saucepan over medium heat and wait for the melting process to begin. Do not stir, just tilt and shake the bowl to melt the sugar evenly. As soon as the individual grains of sugar disappear and it acquires an amber hue, add the butter. When it melts, add the flakes, mix gently and pour in the cream a little. If the caramel immediately "grabs", then keep it on fire for a little, it will melt again. Within 2 minutes on the fire in caramel, the flakes will be ready, moreover, the mixture cools for a long time and they will not remain raw. Remove from heat and add nuts to the mixture.

Place the caramel base into a mold and flatten. For a delicate milky flavor, make a custard. Add sugar, flour and milk successively to the yolk. Stir well and place in the microwave for 2 minutes, while taking out the container every 20 seconds and stirring. Place the cream in a mold on top of the oat-nut caramel.

Cut the fruit into thin and even pieces, preferably the same size. Arrange them in a shape diagonally in nice, even rows. So in one cut piece of cake there will be several different fruits.

Make jelly. Mix 2 teaspoons of dry cake jelly with 130 ml of fruit juice. Boil for a minute, cool slightly and evenly, using a brush, pour over the fruit. The jelly instantly freezes, thanks to it, the fruits do not darken and do not dry out even the next day. Even children who don't like oatmeal will love this cake.
