It is quite possible to stick to a healthy diet without denying yourself sweets. Here is a recipe for a delicious cake made exclusively from natural products and suitable even for raw foodists.
It is necessary
- Half a glass of small oatmeal;
- Unroasted almonds - 1 glass;
- Cashews - 100 gr.;
- Maple syrup (can be replaced with liquid honey) - 2 tablespoons for the crust and 2 teaspoons for the top layer, 1 tbsp. sauce spoon;
- Coconut oil - 3 tablespoons for the crust and 1/4 cup for the top layer, 2-3 teaspoons for the sauce;
- Large dates - 15 pieces;
- Almond milk - half a cup;
- Cocoa - 1/3 cup (you can replace it with carob, but the taste will be different, in which case you will need to take a little less powder, about 1/4 cup, or more butter);
- Sea salt - to taste (without it).
Instructions
Step 1
Pre-soak cashews in cold water for 4-5 hours. Dates also need to be soaked, enough for 1-2 hours. Peel them.
Step 2
Grind the oatmeal in a coffee grinder to a flour consistency. Separately grind the almonds (more convenient in a blender) until finely crumbled. Mix with oatmeal, maple syrup and coconut oil to the mixture. Place the mixture in a mold, preferably on parchment paper.
Step 3
To prepare the top layer, combine the soaked cashews and dates in a blender, and separate almond milk, syrup and coconut oil. Combine both mixtures and bring to a homogeneous state. Spread this layer evenly on top of the crust.
Step 4
Cooking the sauce. Pour liquid coconut oil into cocoa, stirring constantly. Add syrup, stir as well. Pour the resulting syrup over the cake and place in the freezer.
Step 5
When serving, the cake should be kept at room temperature for 15-20 minutes. Never defrost in the microwave!
