It is necessary

  • Dough:
  • - 1 1/4 cups flour
  • - 1 1/2 teaspoons sugar
  • 1/2 teaspoon salt
  • - 100 grams of cold butter
  • 1/4 cup very cold water
  • Filling:
  • - 1 1/2 cups oatmeal
  • - 1/4 cup cream
  • - 100 g sweet chocolate, coarsely chopped
  • 3/4 cup brown sugar
  • - 1/4 teaspoon ground ginger
  • - a pinch of salt
  • - 5 tablespoons butter, melted
  • - 1 cup of honey
  • - 1 teaspoon vanilla extract
  • - 2 teaspoons of apple cider vinegar
  • - 4 large eggs

Instructions

Step 1

Combine flour, salt and sugar. Then add the oil and stir in a food processor. Transfer the dough to a bowl. Add 1/4 cup cold water and stir with a silicone spatula. Then knead the dough with your hands. Add some water as needed.

Step 2

Wrap the dough in foil and refrigerate for 1 hour or simply place in the freezer for 15 minutes.

Step 3

Gently transfer the dough into a round shape, pressing down to the bottom and sides. Place the oatmeal on a baking sheet and dry in the oven for 10-12 minutes, stirring occasionally. Then set aside to cool.

Step 4

Pour the cream into a small saucepan and let it simmer. Break the chocolate into pieces and melt in the cream. Stir well until smooth. Then spread evenly over the dough and place in the freezer.

Step 5

To prepare the filling in a large bowl, stir together the brown sugar, ginger, salt and melted butter. Add the corn syrup, vanilla and vinegar, and then the eggs one at a time, whisking the mixture each time until creamy. Next, add the oatmeal.

Step 6

Pour the resulting filling over the chocolate coating. Bake for about an hour. Serve slightly warm or at room temperature.

Step 7

The pie can be stored in the refrigerator for 3 days or at room temperature for 2 days.
