Instructions
Step 1
Measure sugar and water at 3 parts sugar to 1 part water. Pour water into a saucepan and add sugar to it. Heat the mixture over low heat until all the sugar is dissolved.
Step 2
Add a few drops of cognac and a dash of vanilla sugar. Heat the mixture for 1 minute. Food colors can be added. Stir the mixture continuously and make sure that the sugar does not catch fire.
Step 3
Remove the pan from the heat. Add a dash of lemon juice and a drop of peppermint oil to the mixture. You can use any other citrus juice instead of lemon juice. Caramel without citrus is too sugary.
