Indian sea rice does not belong to cereals in any way. Its other name is Indian mushroom. It is the most useful among all known drinking mushrooms, in shape and size similar to translucent boiled rice grains or ice. It was first brought to Russia from India in the 19th century, which is why it was called Indian. You can cook Indian sea rice yourself at home.

- glass jar;
- gauze on the neck of the can;
- clean water (unboiled filtered).
- Additionally, you can add:
- sugar (plain or brown);
- dried fruits (raisins
- prunes
- dried apricots
- figs, etc.);
- toasted croutons.
Instructions
Step 1
To prepare an infusion of sea rice for 1 liter of water, take 2-3 tbsp. tablespoons of sugar. The addition of "brown" cane sugar gives a great effect. the drink will be tastier as a result. Stir the sugar well until it dissolves completely. Please note - if grains of sugar get on the rice, then the sea mushroom can get sick.
Step 2
Then add 10-15 raisins. Dark seedless raisins are preferable. Instead, you can use prunes, figs, apples, apricots and other dried fruits.
Step 3
Place Indian sea rice in the prepared solution. Standard proportion: 4 tbsp. tablespoons of sea rice, 2-3 tbsp. tablespoons of sugar, 10-15 raisins. You can experiment with the amount of sugar by adding more or less. Over time, you will understand which drink you like best.
Step 4
Insist the sea mushroom for 3 days (in the summer - 2 days). It is advisable to put the can with the drink in a bright place, where it is moderately warm, dry enough and there is no direct sunlight. After 3 days, remove the gauze and use a regular spoon or slotted spoon to remove the raised raisins and dead rice from the surface. Then strain the infusion through 4 layers of cheesecloth or a sieve into a clean jar. Rinse strained sea rice thoroughly with clean water at room temperature, previously separated from chlorine. The mushroom is ready for seasoning again.
Step 5
Save Indian rice for later use. The optimum temperature for the life of Indian rice is 23-27 degrees. At the same time, the following pattern is observed: the higher the ambient temperature, the faster the drink is prepared and the faster the amount of sea rice increases. When the temperature drops to 18-20 degrees, Indian rice stops multiplying and grows in the size of "grains". When the temperature drops below 16-18 degrees, the rice begins to decrease in size and may even die in the future. Therefore, do not let your sea rice freeze. To prevent a drop in temperature that adversely affects the mushroom, place the beverage can near the stove or electric kettle.
