  • - 2 small eggs;
  • - 1 cup flour;
  • - 0.5 tsp baking powder;
  • - a pinch of salt;
  • - 1 tbsp. kefir;
  • - 1.5 cups fresh gooseberries.

Instructions

Step 1

Preheat the oven to 160 degrees. Prepare the mold by greasing it with melted butter or simply lining it with parchment (baking) paper. If you bake in silicone, it will be enough just to sprinkle it with water from a spray bottle.

Step 2

The cooking oil must be softened. Whip it into a fluffy light mass with the addition of powdered sugar. You can also use fine granulated sugar, but then beat a little longer to dissolve the sugar. Beat eggs one at a time into the butter mixture, beating thoroughly each time.

Step 3

Sift flour with baking powder and add to the rest of the ingredients. Mix until smooth and add kefir. Pour into prepared dish and place fresh gooseberries on top. Place in a hot oven for 50-55 minutes. Cool the finished muffin completely and cut into portions. I recommend sprinkling with icing sugar for those with a sweet tooth!
