The spring-summer season pleases summer residents with a harvest of various fruits and berries, which can bring a sense of celebration even to the everyday diet. Instant berry pies are a wonderful sweet dish for the whole family. It is not a shame to offer it to unexpected guests. Any ripe fruits will do as a filling. For example, you can make light gooseberry baked goods.

- 0.5 kg of gooseberries or a glass of gooseberry jam;

- 80 g margarine;
- 150-200 g sugar;
- vanilla sugar;

- 5 g of soda;
- 2-3 eggs;
- 2.5 cups flour;
- 20 g butter;

Instructions
Step 1
Sort out 0.5 kg of ripe gooseberries, remove all receptacles and stalks from them with scissors. Rinse the fruit thoroughly in a colander and let the moisture drain.
Step 2
Melt 80 g of margarine and mix it with 150 g of granulated sugar. Add to this mixture a small bag of vanilla sugar, half a cup of sifted wheat flour and 3 yolks of large chicken eggs. Knead the dough.
Step 3
Place 3 egg whites in a clean glass or metal bowl and beat well with a mixer until you have a firm, fluffy foam. Add it in small portions to the dough, stirring constantly with a spoon.
Step 4
Salt the dough to taste, knead and divide into 2 equal parts.
Step 5
Line a baking dish with baking parchment and place the first part of the dough in it. Smooth out the bottom layer and cover it with gooseberries. Next, lay a second even layer of dough.
Step 6
Place the dish in the preheated oven and bake the gooseberry pie for 45-50 minutes. When you bring it to full readiness, remove the baked goods from the oven and brush with melted butter (20 g).
Step 7
If you love gooseberry baked goods, you can even make them in winter. An easy recipe for these baked goods includes a small amount of available products and a whole glass of filling. You can use frozen berries, which must first be defrosted and dried. An excellent addition to the pie is gooseberry jam with syrup.
Step 8
Place a teaspoon of baking soda in a glass of filling and mix thoroughly. Alkali reacts with acid, so gooseberry jam should change its color and increase in volume.
Step 9
Wait 5 minutes, then add 2 chicken eggs, a glass of kefir and granulated sugar to the filling (half a glass of sugar in jam, a glass in frozen berries). Add 2.5 cups of sifted wheat flour in small portions.
Step 10
Toss the filled dough and pour into a baking dish. Remember to cover the container with baking parchment first. Preheat the oven to 180 degrees and bake the gooseberry pie until it rises.
