Ingredients for the dough base:

  • 30 g butter;
  • 175 g sugar;
  • 2 egg yolks;
  • 0.4 kg flour;
  • 3 tablespoons of cold water;
  • salt.

Ingredients for the filling:

  • 0.5 kg of ripe gooseberries;
  • 3 teaspoons of cornstarch.

Ingredients for the sauce:

  • 3 egg yolks;
  • 1 teaspoon flour;
  • 100 g cane sugar;
  • 150 ml of cream.

Preparation:

  1. Combine softened butter, sugar, egg yolks, sifted flour and salt in one container, mix until smooth. This can be done in a blender. At the end of mixing, pour cold water into the flour mass, mix everything again so that the dough gathers into one ball, then wrap it in cling film and place in the refrigerator for 1 hour.
  2. After an hour, turn on the oven and heat up to 180 degrees, and grease a baking dish (28-30 cm in diameter) with oil.
  3. Remove the dough from the refrigerator, unwind, roll it out with a rolling pin, put it in a mold and stretch it, form high sides.
  4. Chop the test base with a fork and place in a hot oven for a quarter of an hour.
  5. Wash the entire gooseberry, simultaneously removing all the tails and stalks. Cut each berry in half. Put all the halves in a bowl, cover with starch and mix gently with your hands.
  6. In a blender, combine and mix until smooth the cream, sugar, flour, yolks. If the gooseberries are sour, then you need to take more sugar than indicated in the recipe.
  7. Remove the baked dough base from the oven and cool slightly.
  8. Put the whole gooseberries in a dough base, smooth with your hands and pour over the sauce.
  9. Place the formed gooseberry pie in a creamy sauce in the oven and bake for 30-40 minutes. Check the readiness of the cake with a match or a toothpick. Note that the baking time of the cake is indicated approximately, since each oven has its own characteristics that must be taken into account.
  10. Remove the finished gooseberry pie from the oven, cut into pieces and serve with your favorite drink.
