If you don't have a scale, then a simple method of determining the right portion of pasta will come to your rescue. The thickness of your thumb is the same as the amount of spaghetti per serving.
A 60-gram portion of pasta is a normal portion, provided you still have salad or soup and dessert.
Remove the skin from the salmon and cut into small cubes of about 2 cm.
We clean the onion and cut it into small cubes or even crumbs.
Peel the garlic and squeeze it through a garlic press, if you don't have it, just chop it finely.
Greens, you can use dill and parsley, for this dish you need only half a bunch. Thyme greens are ideal. Finely chop the herbs, and peel the thyme from the twigs with your fingers. We will not use the thyme sprigs, they remain tough even after cooking, so it is better to throw them away, since the aroma is in the leaves.
You can start cooking
Throw the pasta into a pot of boiling salted water.
Pour oil (sunflower or olive) into a preheated pan, add chopped onions, fry over high heat, stirring for about 3 minutes. Then add the garlic and chopped salmon. The fire must always be high, otherwise the ingredients will juice and stew instead of frying. Season all with salt, pepper and add thyme, fry for 3 minutes. Then add wine to the pan.
By this time, the pasta should be almost ready. We try, if it is close to the finished state, we drain it into a colander and, without waiting for drying, we throw it into the rest of the ingredients.
Add cream and let simmer for 2 minutes over low heat.
Add dill or parsley at the end.
The dish is ready, it must be served immediately, as the pasta can be re-cooked in the sauce even without fire.
