The main thing is that you have a mask (glasses are also possible), gloves and a strong draft in the kitchen. And do not use utensils in which you cook baby food.
The pepper is ground, mixed with salt, folded into a jar and fermented in a warm place. The fermentation process takes a week or two, depending on the temperature in the house. Then add classic vinegar at the rate of one tablespoon of vinegar to a glass of pepper pulp. You can add garlic or seasonings. Strain and the sauce is ready.
In field conditions, it can be replaced with chili sauce. In an extreme case, when there are no ready-made sauces, apply ground red and sprinkle the dish with vinegar.
