The quality of the kebab largely depends on how correctly and original it is pickled. To prepare a kebab with an unusual taste, a marinade with the addition of vinegar, mineral water, lemon juice can be replaced with another more original marinade, which can always be found at home or in a store.
Tea Marinade
It often happens that there is absolutely no extra time to go shopping before going out into the countryside (for a barbecue). In such a situation, the main thing is that meat is available, and the marinade can be made from tea, which is always in the house. Almost any meat can be marinated in tea.
The following ingredients are required:
- 1 kg of pork meat
- 50-70 g of good black leaf tea
- spices for barbecue
- salt
- Prepare the meat: cut into pieces necessary for a kebab. Salt. Adding spices to the kebab is the taste of the kebab maker.
- Prepare boiling water. Pour boiling water over the tea. There should be enough boiling water so that the tea will subsequently cover all the meat. Let the tea brew. Enough for 20-30 minutes.
- Pour the prepared tea over the meat and marinate in it for 4 hours. More is possible. Depends on how much time you have. Stir the meat periodically.
Teriyaki sauce
Chicken shashlik is very tasty and tender. Many people prefer it. It will be even tastier and more tender if the chicken is marinated with teriyaki sauce.
For the kebab you will need the following ingredients:
- 1 kg of chicken meat (any chicken meat is suitable)
- 3-5 tbsp. l. teriyaki sauce
- 1 tbsp. l. soy sauce (you can skip it if you don't have it)
- 3 sprigs of rosemary (you can take a pinch of dry)
- a couple of garlic cloves (optional)
- salt and spices to taste
- Cut the chicken into pieces that suit you. You can take any part of the chicken - thigh, legs, wings, or the whole chicken. Fold in a container where the meat will be marinated.
- In a bowl of teriyaki sauce, add everything else from the ingredients - salt, spices, rosemary, soy sauce, garlic, which can be chopped in any way.
- Pour the marinade into the meat and mix very well so that each piece is in the marinade. Chicken meat is tender, and therefore 2-3 hours is enough for it to be ready.
Brine marinade
If you have a couple of jars of canned cucumbers or tomatoes in your house, then their brine can also be useful for marinating a kebab. For this marinade, it is better to take beef or pork.
Ingredients that will be needed for this kebab:
- 1 kg of meat (pork, beef)
- 1-1.5 L of brine drained from canned tomatoes (cucumbers)
- 2-3 onions
- 1 tsp. ground black and red pepper (you can give preference to one of them)
- Cook the meat in the usual way, slicing it in portions.
- Cut the onion into rings (half rings). Pour it to the meat. Salt a little. Add pepper and mix well. Set aside for an hour or two.
- Then pour with brine and leave to marinate for 5-6 hours. Can be refrigerated overnight.
- Prepare a shish kebab.
