Glass noodles are made from legume starch. There are noodles made from rice starch, they are called funchose in Central Asia. Such noodles go very well with any food, and just fine with vegetables. This noodle does not have its own pronounced taste.
The following products are required:
- 1 pack of glass noodles,
- 6 pieces of king prawns,
- 200 grams of peeled squid
- 100 grams of scallops,
- 1 large red tomato
- 1 onion head
- 100 grams of green celery,
- 100 grams of green onions,
- 100 grams of lime juice
- 100 grams of fish sauce,
- 1 tbsp. a spoonful of sugar.
First of all, you need to prepare the glass noodles. Boil water in a saucepan, remove the noodles from the package, put in a colander and dip in boiling water for 3-4 minutes. After that, we take it out of the boiling water, let the water drain and wait until it cools down.
Then we take the squid, rinse it with running water and cut it into large pieces. Remove the shells from the shrimp, and leave the tails. We wash scallops well and divide each scallop into 4 parts. We spread the seafood in a sieve and put it in a saucepan with boiling water for 4-5 minutes. Then I wash the finished seafood under the tap and set aside so that excess water is drained from them.
We take a deep cup, put the finished noodles and seafood in it. Peel the onion and cut into half rings. Wash the tomato well, remove the seeds from it and cut into strips. We wash and dry the celery. We check the green onions for quality, wash them under running water and put them on a clean kitchen towel to remove the water. Then chop the onion coarsely. Squeeze lime juice into a cup with noodles and seafood, add fish sauce, granulated sugar and mix well. Now put the prepared vegetables and mix again. Serve the salad to the table in beautiful plates, pre-garnished with celery.
