To prepare an egg salad, you will need a simple set of inexpensive foods. If you are preparing for a family celebration, expecting guests or want to whip up dinner, then you just have to choose one of the recipes.
How to make quail egg vegetable salad
- cherry tomatoes - 5-6 pcs.;
- large cucumber - 1 pc.;
- quail eggs - 5 pcs.;
- Salami - 50 g;
- feta cheese - 70 g;
- olives - 5-6 pcs.;
- white or red onion - 0.5 pcs.;
- lettuce leaves - 1 bunch;
- lemon - 0.5 pcs.;
- olive oil - 2 tbsp. l.
To prepare such a salad, you first need to boil quail eggs. Dip them in a ladle and cook for 5 minutes after boiling water. When boiling time comes to an end, cool the eggs, peel them and cut them in half.
In the meantime, you can prepare the rest of the ingredients. Rinse the leaves of fresh lettuce, dry and place on a serving plate. Peel the red onion and cut into thin half rings. Cut the cherry tomatoes in half. Chop the cucumbers in a semicircle. Cut feta cheese into small cubes and slices of Salami in half.
After that, spread all the prepared ingredients on the lettuce leaves. Combine the juice squeezed from half a lemon with the olive oil and season the salad. At the very end, garnish the meal with olives.
Egg salad with cream cheese
You will need:
- chicken eggs - 4 pcs.;
- processed cheese - 200 g;
- garlic - 3-4 cloves;
- black pepper and salt - to taste.
Place chicken eggs at room temperature in a bowl and cover with cold salted water. Once the water boils, boil the eggs for 8-10 minutes. After that, cool them in cold tap water and, after 5 minutes, peel them, and then grate them on a coarse grater. Processed cheese (you can take "Friendship") should also be grated. Remove the husk from the garlic and crush through a press. After that, mix eggs, cheese and garlic in a salad bowl. Season the salad with black pepper and salt.
Salad with eggs and herbs
- chicken eggs - 5 pcs.;
- sour cream with a fat content of up to 20% - 5 tbsp. l.;
- green onions - 1 bunch;
- dill - 0.5 bunch (optional);
- ground black pepper and salt.
Cool and peel boiled hard-boiled eggs. Then cut them into cubes or strips and place them in a salad bowl. Rinse and chop green onions with dill, add to eggs. Add sour cream, pepper and salt to taste. Mix everything together well.
Salad with ham, cheese and cucumbers
- ham (you can take bacon or brisket) - 150 g;
- hard cheese - 150 g;
- chicken eggs - 2 pcs.;
- cucumbers - 2 pcs.;
- mayonnaise and salt to taste.
Cut all the ingredients into strips and put them in a salad bowl. Season the salad with mayonnaise, add a little salt and stir. You can use any other dressing in place of mayonnaise, such as sour cream or olive oil mixed with a tablespoon of lemon juice.
Salad with sausage and canned corn
- chicken eggs (large) - 2 pcs.;
- boiled sausage - 250 g;
- canned corn - 150 g;
- fresh cucumbers - 2 pcs.;
- red onion - 1 pc.;
- mayonnaise and salt to taste.
Chop the boiled eggs into small cubes. Remove the skins from the cucumbers and red onions. Cut the onion into thin quarter-rings, and the cucumbers and sausage into cubes. After that, put all the ingredients in a salad bowl, add corn, salt, mayonnaise and mix everything together well.
Egg salad with boiled chicken
- boiled chicken fillet - 150 g;
- chicken eggs - 4 pcs.;
- hard cheese - 150 g;
- medium-sized potatoes - 2 pcs.;
- mayonnaise, - ground black pepper, salt.
First you need to boil the chicken breast. To do this, put it in a saucepan of water. When the water comes to a boil, add some salt and simmer for 40 minutes at moderate heat, while boiling the jacket potatoes and chicken eggs. After cooling, remove the skin from the potatoes, and the shell from the eggs, and then chop them into small pieces. Cut the chicken breast and hard cheese into small cubes. Place all ingredients in a salad bowl and season with mayonnaise. At the end, add black pepper, salt and mix well.
Egg salad with mushrooms
- chicken eggs - 4 pcs.;
- pickled mushrooms (for example, champignons) - 100 g;
- green onions - 0.5 bunch;
- mustard - 0.5 tsp;
- mayonnaise;
- black pepper;
- salt.
Boil the eggs, then cool them, peel and cut into cubes. Cut the pickled mushrooms into thin slices. Chop the green onion finely. Then transfer all the ingredients to a salad bowl, season with mustard, add mayonnaise, black pepper and salt to taste.
