This year will end very soon and the next one will come. We are all waiting for him and preparing to meet him with a table full of treats. I offer you a recipe for a salad for the New Year's table, it is not for nothing that it got the name "Carnival Night".

It is necessary

  • - 300 grams of slightly salted herring,
  • - 200 grams of lightly salted cucumbers,
  • - 200 grams of prunes,
  • - 300 grams of Borodino bread,
  • - 1 onion,
  • - 2 tablespoons of vinegar,
  • - favorite spices,
  • - 3-4 sprigs of parsley,
  • - vegetable oil for frying.
  • For refueling:
  • - 60 ml of vegetable oil,
  • - 1 egg yolk,
  • - 10 grams of mustard,
  • - 1 tablespoon vinegar (3%)
  • - 10 grams of sugar
  • - salt on the tip of the knife.

Instructions

Step 1

Peel the onion, cut into thin half rings and place in a bowl. Add spices to the onion, pour vinegar and a glass of boiling water. Leave to marinate for 1 hour.

Step 2

Gut the herring, cut off the fins and tail. Peel the herring fillets, remove the backbone and rib bones. Cut the herring into slices about 2 to 3 centimeters wide.

Step 3

Cut off the ends of the cucumbers and cut into thin strips. Sort the prunes and steam with boiling water for 15 minutes. After that, squeeze the prunes and cut each into 4 pieces.

Step 4

Cut the bread into slices no more than 2 centimeters wide. Cut off the crusts and cut out stars (or just cut into small pieces). Dry the bread in the oven, sprinkle with your favorite spices.

Step 5

To make the dressing, take an egg yolk and mash it well with mustard, salt, sugar, and vinegar. Dilute the resulting mixture with vegetable oil and mix everything thoroughly.

Step 6

Mix the herring with cucumbers, prunes, croutons and sprinkle with pickled onions on top (do not forget to squeeze the onions well). Pour the resulting salad with the dressing and sprinkle with finely chopped parsley. Put the salad in the refrigerator for 2-3 hours and serve.
