The Italians themselves claim that this dessert was invented long ago, back in the 18th century, by the chef of the Duke Cosimo II and was called "Zuppa del duca". However, the first mention of it appeared only in the middle of the 20th century. In 1971, an article was published that described tiramisu as a dessert created in the Alle Beccherie restaurant in Treviso in the 60s. Until now, the meters argue who actually first cooked this culinary miracle.

The classic recipe consists of eggs, mascorpone cheese, powdered sugar, coffee, rum (cognac) and savoyardi cookies. If you want to get real tiramisu, you cannot change the ingredients, since their combination gives those exquisite taste sensations for which everyone loves it. Although there is one digression. Savoyardi can be replaced with cake layers. This does not really affect the taste.

The amount of mascarpone in the cream depends on the number of eggs. For 3 eggs - 500 grams and 200 grams of powder, for 5 eggs - 750 grams of mascarpone and 300 grams of powder. To begin with, separate the whites from the yolks and knock them down with 2/3 parts of powdered sugar into a protein cream. The yolks and the remaining powder are combined with mascarpone and also churned into a homogeneous mass. Where then whipped whites are carefully added, kneading with a spoon clockwise so that the cream does not lose its splendor. The most important part of the dessert is ready.

Let's move on to the second part. Add 3 tablespoons of rum or brandy to a glass of strong coffee (it is desirable that it be brewed from insoluble coffee). The cakes are soaked in this mixture or biscuits are dipped in it. There are subtleties here. If you have cakes, then start stacking with them as usual. If cookies, then - in the form (it should open), first put a layer of cream, then each cookie is quickly dipped in coffee and lays down. The action continues until the entire layer is filled, then the cream, again a layer of cookies. It should end with a cream that is sprinkled with cocoa. In order for it to lay down evenly, this must be done through a sieve. The finished dessert is placed in refrigerators for at least 5 hours.

Now you can cook tiramisu at home and amaze your friends with a culinary masterpiece.
