In terms of nutritional value and protein content, it is close to meat, but it has less calories and, moreover, is rich in fiber and vitamins. In addition, after such a dish, you will not want to eat for a long time and you will feel vigorous.

It is necessary

  • For puree without soaking:
  • - 400 g of dry yellow split peas;
  • - 30 ml of vegetable oil;
  • - salt;
  • For Greek puree:
  • - 250 g of dry yellow peas;
  • - 1 onion;
  • - half a lemon;
  • - 1 sprig of oregano;
  • - 90 ml of olive oil;
  • - salt;
  • For frozen pea puree:
  • - 300 g frozen green peas;
  • - 50 ml of 20% cream;
  • - 20 g butter;
  • - 1/2 tsp each ground black pepper and salt.

Instructions

Step 1

Pea puree without soaking

Sort out dry peas, discarding the darkened ones, and rinse thoroughly under running water. Transfer them to a large saucepan, pour 6, 5 tbsp. cold water and put on high heat. Pour in vegetable oil, add 1/2 tsp. salt, stir and bring to a boil.

Step 2

Reduce the temperature to medium and cook the peas, covered, for 1.5 hours. Stir it with a spatula or spoon as often as possible so that it does not burn, and be sure to remove the resulting white foam with a slotted spoon.

Step 3

Remove the lid and set aside, reduce heat to the very minimum and simmer the pea puree for half an hour, then add salt to taste, set aside and stand for another 20-30 minutes so that it still thickens to the correct consistency. Serve it as a side dish or as a stand-alone dish.

Step 4

Greek pea puree

Soak dry beans in cold water for a few hours, preferably overnight. It is advisable to change the water a couple of times during this time. Place the peas in a colander and rinse. Place it in a saucepan. Peel the onion and chop with a knife, finely chop the oregano.

Step 5

Put the onions and herbs in a saucepan, pour the olive oil and water so that it covers the food with two fingers. Boil everything over high heat and reduce to low. Cover the dish with a lid and cook the peas for 40 minutes before boiling. Salt it and cook for another 20-30 minutes.

Step 6

Cool the pea mass slightly, mash it with a hand blender and heat on the stove. Stir in lemon juice, arrange on bowls and serve with unleavened cakes.

Step 7

Frozen Pea Mash

Fill a small saucepan with 3-4 tbsp. water and bring to a boil. Dip frozen peas in there and cook for 3 minutes, then discard in a colander and transfer to a bowl. Crush it in a puree with a potato press or blender, mix with cream, butter, salt and pepper.
