  • - 1 bell pepper (green, red, yellow);
  • - 2 fresh medium-sized cucumbers;
  • - 1 fresh carrot;
  • - 50 g cashew nuts;
  • - 2 tbsp. high quality olive oil;
  • - 20 g sesame seeds;
  • - 0.5 tsp lemon juice;
  • - 1 tsp balsamic vinegar.

Instructions

Step 1

Pre-thaw the shrimp for 20 minutes. To save time, you can pour boiling water over the seafood. Remove the shell and separate the tail from the head. Remember to remove the intestinal vein with a toothpick. Place the meat in a deep bowl and leave with a drizzle of lemon juice.

Step 2

Peel vegetables and chop into thin strips. Pour 1 tablespoon into the pan. olive oil and place the carrots. Fry, stirring constantly, for 10-15 minutes. Add chopped bell peppers and cucumbers. If you notice that the carrots have become soft, then this is a sure sign of readiness.

Step 3

Place the prepared shrimp in the vegetable mixture and continue to fry for another 5-7 minutes. Finally add the nuts, cover and simmer for about 3 minutes. Place the prepared salad in a separate bowl and let cool slightly.

Step 4

Make a sauce made up of leftover olive oil, lemon juice, and balsamic vinegar. Whisk all the ingredients together and quickly pour over the dish. Garnish with fresh lettuce and sprinkle with toasted sesame seeds on top.
