Sauerkraut is not just a good snack, it is also a real storehouse of vitamins C and A. It is their deficiency that the body experiences especially acutely in winter. Unfortunately, the conditions of a city apartment do not allow souring cabbage in the old fashioned way with barrels and large pots, but it is quite possible to do this in a jar.

It is necessary

    • 1 fork of cabbage for 2-3 kg
    • 500 g carrots
    • 100 g salt

Instructions

Step 1

You can't take any sourdough salt. It is best if these are large salt crystals without any impurities, especially iodine and fluorine. These two elements destroy the cellular structure of cabbage, and it ceases to be juicy and crispy. Fine salt is also unsuitable due to impurities designed to prevent caking. Therefore, look in the store for regular coarse table salt.

Step 2

Peel the top leaves from the cabbage, set the cleanest ones aside. They will still be useful to you. Cut the head of cabbage in half and chop with a special grater or an ordinary knife. Collect it on the table in a slide.

Step 3

Wash the carrots, peel them, rinse and grate with a grater or food processor. Shake the carrots along the cabbage slide, distribute the salt evenly on top.

Step 4

Now comes the most crucial stage of cooking - kneading cabbage. The more carefully you do this, the tastier the future snack will be. Knead the cabbage and carrot mass like a dough, squeeze it, rub it with your hands. During the process, you should start to release juice.

Step 5

Take a clean jar, start tamping cabbage into it. Do not just fold, but tamp it in small portions, while ensuring that the cabbage juice covers the vegetables.

Step 6

Cover the cabbage with a whole leaf, place the jar in a deep plate, as the cabbage will continue to release juice as it ferments. Leave it to stand at room temperature. After 2 days, pierce the contents of the jar with a wooden stick to release air and leave for another day.

Step 7

After three days of fermentation, the cabbage will be ready, you can put it in the refrigerator and store there until it is completely consumed.
