Eggplant has a high nutritional value and unique taste. They retain their characteristic, recognizable aroma during any processing - cooking, frying, stewing, salting or pickling. Eggplants are extraordinarily tasty as an independent dish, and in combination with other vegetables they add a special flavor to the meal. And eggplants are in good harmony with meat, so it makes sense to try to cook them with minced meat and vegetables.

- - Eggplant - 2 pcs. (large)
- - Bulb onions - 2 pcs.
- - Minced meat - 250g
- - Carrots - 1 pc.
- - Tomatoes - 0.5 kg
- - Cheese - 100g
- - Garlic - 2 cloves
- - Vegetable oil
- - Salt pepper
Instructions
Step 1
Wash the eggplants, dry and cut in half lengthwise. Scrape out the core with a spoon so that the wall thickness remains at least 1 cm. Salt the halves and leave for half an hour.
Step 2
Finely chop the carrots, chop the onion, chop the removed pulp with a knife. Finely chop the garlic or squeeze through a special press. Put all the ingredients in a frying pan with vegetable oil and simmer until soft. Add minced meat to the pan with vegetables and fry, stirring constantly.
Step 3
Pour boiling water over the tomatoes, peel and cut into cubes. A third of them must be added to the meat, season the stew with salt and pepper.
Step 4
Rinse the eggplant halves under running cold water and pat dry. Fill the eggplant boats with minced meat and sprinkle with grated cheese. If desired, you can put tomato slices on top of the minced meat.
Step 5
Transfer the remaining tomatoes to a baking dish and place the eggplants on top of them. Put the form in an oven preheated to 200 degrees and simmer for 45 - 50 minutes until tender.
Step 6
Cool and decorate the ready-made "boats" at your discretion. Serve the dish warm, so the taste will be most pronounced.
