Strudel is one of the most popular dishes in Austrian and German cuisine. An interesting technology for preparing strudel dough is the so-called stretched dough with the exact time and number of proofs. The dough for this dish is prepared without yeast and because of this it does not stale for a long time. Based on the same dough, you can make not only the famous apple strudel or many other sweet strudels, but even strudel with vegetables or meat.

- 500 g flour
- 200 g butter
- 3/4 cup water
- 1 glass of milk
- For filling:
- 200 g pork
- 200 g of beef
- 1 egg
- 1 onion
- ½ glass of milk
- 200 g white bread
- salt
- ground black pepper
Instructions
Step 1
Sift flour through a sieve to prepare the dough.
Step 2
Melt the butter.
Step 3
Add warm water and 50 grams of melted butter to the flour.
Step 4
Knead the dough. Shape into a bun, cover with a towel, and proof with a bowl of dough in a saucepan of hot water for 15 minutes.

Prepare the filling.
Soak the bread in milk for 7-10 minutes.

Beat the egg lightly.
Step 7
Scroll the pork and beef through a meat grinder.
Step 8
Peel the onion and also mince it.
Step 9
Mash the bread to a state of gruel.

Add the onion, bread and egg to the minced meat, mix, salt and pepper.

Roll out a thin layer of dough, then roll up the dough again and place in a bowl for another 10 minutes.

Roll out the finished dough very thinly, no more than 1-1.5 cm thick.

Then transfer the dough to a large cotton towel and stretch it with your hands in all directions until 1 to 2 mm thick.

Drizzle the remaining butter over the dough.

Place the filling on one edge of the dough, along the edge.

Gently wrap the filling in the dough using a towel, rolling the dough into a roll.

Pinch the resulting roll on both sides and bend its ends inward.

Place the strudel carefully in a greased baking dish.

Pierce the roll with a fork in several places.

Place the strudel in the oven at 170 degrees Celsius for 20 minutes.

Then remove, pour a glass of boiling milk onto the strudel and cook in the oven for another 25 minutes.
