A salad of fried young zucchini and pickled porcini mushrooms is a dietary dish that will be appropriate both for fasting and for any diet. It is prepared very simply, easily and quickly. As an addition, pickled onions, herbs and garlic croutons from homemade bread are thrown into the salad. If the diet is very strict, then, if desired, crackers can be completely excluded.
Ingredients:
- 4 small zucchini;
- 100 g of marinated white mushrooms;
- 1 clove of garlic;
- 1 slice of white bread
- ½ onion;
- 4 tbsp. l. sunflower oil;
- 1 tsp olive oil;
- 1 tbsp. l. balsamic vinegar;
- ½ tsp salt;
- 1 pinch of ground black pepper;
- 1 sprig of dill;
- 1 onion feather
Preparation:
- Peel the onion, wash, cut into rings, put in a bowl, pour vinegar and leave to marinate for a quarter of an hour.
- Wash the zucchini and cut into circles 0.5 cm thick. For this salad, it is recommended to take only young zucchini, since they are seedless and with a thin skin.
- Place the zucchini mugs in a bowl, sprinkle with salt and stir. Then fry in sunflower oil until golden brown.
- Drain the marinade from the porcini mushrooms, and cut the mushrooms themselves into 1-1.5 cm pieces. Pass the garlic through the garlic. Wash dill and onion greens, dry a little and chop finely with a knife.
- Pour olive oil into a skillet and heat it up. Put chopped garlic in oil and fry for no more than 30 seconds.
- Spoon the fried garlic over the bottom of the pan, giving it the shape of a slice of bread.
- Then cover it with bread. Fry the bread in garlic oil on one side, then turn it over to the other side and also fry a little. As a result, you should get a dried and slightly fried garlic bread that can be cut with a knife.
- Cut the bread into 1x1 cm cubes.
- Put the fried zucchini in a flower on the bottom of the plate. Place mushrooms and croutons on top of the zucchini, and pickled onion rings on top of the croutons.
- Season the formed salad of courgettes with porcini mushrooms with salt, sprinkle with chopped herbs and serve with or without your favorite side dish.
