It is necessary

    • For cakes:
    • 3 eggs;
    • 1 cup of sugar;
    • 3 tablespoons of honey;
    • 2 tablespoons of brandy or vodka;
    • 3 cups flour;
    • 1 tsp soda;
    • ½ tsp salt;
    • 100 grams of vegetable oil or the same amount of melted butter.
    • For the cream:
    • 500 grams of heavy cream (at least 22%) or the same amount of fat sour cream (20%);
    • 1 cup of sugar;
    • 3 milliliters of vanilla essence.

Step 1

The dough for "Medovik" is prepared like a custard dough, that is, in a water bath. Place one container, smaller, in another, larger, fill with plenty of water and bring to a boil. Put or pour oil into a small container, add honey and sugar. Wait for them to melt. Whisk the eggs a little at this time. Throw a pinch of salt into the eggs for better whipping. You need to achieve a homogeneous egg mass.

Step 2

Stirring continuously with a spatula, pour the egg mass into the heated honey. Warm up for no more than two minutes and add alcohol. Wait, stirring, another minute or two and, without stopping stirring, add baking soda. The volume of the egg-honey mass should increase, it will turn white, and a light fluffy foam will appear. It will take a few more minutes. Add flour in a thin stream, continuing to beat, and remove the dough from heat.

Step 3

Prepare baking paper. Draw several circles on it, 25-30 centimeters in diameter. Choose the diameter depending on how many layers you want. This amount of dough is enough for 5 large or 7-9 small ones.

Sprinkle flour on a work surface and place dough on top of it. Sprinkle it with flour too, put it in a ball and let it cool slightly. If the dough isn't tough enough, you can add flour to it at this stage, but don't get carried away. Divide the ball of dough into the number of pieces you need, according to the number of future cakes. Roll out the cakes directly on the paper and bake. Do not try to roll the cakes exactly in a circle, let them protrude a little. You will trim the edges after baking and the crumb will be useful for decorating the cake.

Step 5

The cakes for "Medovik" are baked in a preheated oven at a temperature of 200 degrees Celsius. Average baking time is 5 minutes. Here everything also depends on the taste preferences of the hostess - someone loves delicately golden cakes, and someone prefers darker, caramel ones.

Preparing the cream. Whip sour cream or cream with sugar and vanilla essence.

We collect the cake. Cut the cakes along the edge. To do this, it is convenient to use some homemade standard - a plate, a frying pan lid. We coat the cakes with cream and sprinkle with crumbs on top. Some housewives sprinkle each cake with crushed walnuts and decorate the cake with it.

In order for "Medovik" to finally acquire its light and delicate taste, it must be allowed to soak for several hours, or better, the whole night.
